Summer Hiring in South West WA: Planning Ahead for December

For South West WA hospitality operators, October is a critical window. The summer trading period, which runs in earnest from late November through to the end of February, is the most revenue-intensive stretch of the year. The Margaret River wine region, Busselton, Dunsborough, and Yallingup draw significant visitor numbers over this period, and getting the team right before it begins is fundamental operational planning.

The venues that will be well-staffed in December are, by and large, the ones doing their hiring now.

Why the Timeline Matters

The hospitality recruitment cycle does not compress well under pressure. A credible search for a Head Chef or Restaurant Manager, the kind of search that produces a genuinely good match rather than the most immediately available option, typically takes three to four weeks from brief to shortlist, and another two to four weeks from offer to start if the candidate is working notice. For permanent roles, the total time from identifying a gap to having someone in the kitchen or on the floor is frequently six to eight weeks.

Running that process in November, with December looming, means either settling for a candidate who is immediately available (statistically less likely to be your ideal profile), extending existing rotas unsustainably, or entering your busiest period understrength. Beginning now means the arithmetic works in your favour.

What to Prioritise in Your October Review

The first task is an honest assessment of your team against the demands of a busy December through February. Think about which roles are at risk: the sous chef whose contract is rolling and who has been making noises about a change, the front-of-house manager whose performance has been inconsistent, the seasonal staff from last summer who you would like to have back but have not yet confirmed.

Identify the single most important gap, the role whose absence would cause the most operational damage, and address that first. Many operators spread their hiring effort across several searches simultaneously and end up with none of them resolved at the pace the calendar demands.

Permanent Hires Pay Back Beyond Summer

For South West venues, the calculation around permanent versus seasonal hiring is particularly important. A permanent Head Chef or Restaurant Manager who settles into the region, who buys into the lifestyle, builds relationships with local suppliers, and develops genuine commitment to the venue, delivers value across the full twelve months, not just the summer peak.

Briefing a Recruiter Now

If you are working with a specialist recruiter, October is the moment to get the brief across clearly. The best candidates for summer starts in the South West are being spoken to now, in some cases they are already in conversation with your competitors. A clear brief covering the role, the salary, the lifestyle proposition, accommodation availability if applicable, and the start date allows a recruiter to work with speed and focus.

Vague briefs generate searches that require multiple rounds of correction and add weeks to the process. The cost of an hour spent clarifying the brief is minimal; the cost of an unfilled senior role through December and January is not.

Retaining Through the Season

Hiring is one half of the summer staffing challenge. Retention through the peak is the other. Staff who leave mid-season, which is not uncommon when a better offer arrives or the pressure of peak trading becomes overwhelming, leave venues short-staffed at exactly the worst time.

The operations that retain through summer are those that have invested in the team's experience of the season: clear rotas published early, acknowledged effort in the moment, and a genuine post-season conversation about the year ahead. These are not complicated things. They are the difference between a team that wants to come back next year and one that does not.
